What is my job:

The job of the Restaurant Chef De Cuisine is to serve as the culinary resource for the entire restaurant leading the team to create, plan and prepare the highest quality menu offerings for our guests.  The Restaurant Chef De Cuisine ensures the kitchen is operating efficiently and profitably, while managing all staff members; leading the way on all culinary development.  Helping team members to be successful by ensuring each person is trained and is consistently executing tasks properly while maintaining the restaurant’s culture, financial sustainability and following corporate programs.


How do I make a difference? 

Ensuring High Quality Products & Ingredients

  • Ensure only the freshest ingredients are used to create an exceptional dining experience for our guests  
  • Support the programs and concepts driven by the Culinary Director of Restaurant Operations including signature items that will be prepared and executed the exact same way at each location, and work with Culinary Director of Restaurant Operations on menu development
  • Create unique menu offerings and specials that incorporate seasonality, guest trends and marketing plans; benchmark with competition to ensure the restaurant stays ahead of the competition and provides guests a dining experience they can’t get elsewhere
  • Execute private parties and special dinners
  • Ensure employees properly handle products, use equipment and keep accurate logs in accordance with food safety and safety guidelines; as well as comply with State Restaurant Health Code Regulations


Continuously Improving Results

  • Drive efficient restaurant operations; oversee culinary operations including budget, schedule, payroll, and culinary offerings; actively drive sales and manage all costs pertaining to back-of-the-house operations
  • Facilitate a relationship between the front-of-the-house service team and the back-of-the-house culinary team to ensure the entire restaurant functions efficiently and effectively
  • Analyze financial reports and product trends and react with the aim of increasing profitability
  • Monitor food production, ordering, cost, quality and consistency on a daily basis and conduct inventories
  • Manage the facility to ensure compliance including use of utilities, equipment, property, and maintenance
  • Oversee the day-to-day running of the kitchen; work with the culinary team to ensure that kitchen is properly staffed and that food is meeting Next Door’s high standards
  • Handle issues and concerns, maintain composure, gain input from others, and lead the team to desired and positive outcomes. Flex and troubleshoot when necessary to ensure a smooth daily operation
  • Maintain a strong presence in the kitchen with the culinary team to ensure employees/products meet guests needs and standards of quality; lead employees and set the pace throughout the kitchen

What skills, learnings, and experiences are required?

  • 3 or more years of proven success as a chef in high standard, fresh concept restaurant/hotel management
  • Managerial experience of a kitchen in a restaurant environment including but not limited to, interviewing, selection, disciplinary action, employee development, managing financials and supervising management
  • Experience in food service profit & loss management
  • Food safety certified
  • Experience creating and modifying recipes
  • Strong verbal and written communication skills
  • Actively communicate the company vision and values to all and ensure work is completed in line with the organization's priorities and goals (integrates Who We Are & What We Do)
  • Conduct accurate cost benefit analysis in order to invest where most the value is added
  • Managing change by gaining a commitment to change using patience, two-way communication and developing a clear picture of the future while supporting our people through transitions and deep rooting the change in their areas
  • Show a customer solutions focus, listening to customers and making decisions with their current and future needs in mind, focusing efforts on building customer relationships and providing incredible service

  • Possess culinary creativity and passion for culinary arts and use these skills, as well as Wegmans cooking techniques, to come up with unique recipes, menu pairings, and presentation ideas that utilize products at the peak of their perfection and aim to enhance culinary style

What skills, learnings, and experiences are preferred and will set me apart? 

  • Associates or Bachelor’s degree in Culinary Arts
  • Diverse culinary experience, including working with a variety of food in a variety of regions and/ or cultures

Work environment:

  • Work involves continuous interaction with co-workers in a fast-paced environment
  • Typical motions include repetitive hand and arm movements, bending, reaching, twisting and pivoting
  • Responsible for moving and lifting an average of 5 – 10 pounds with a maximum weight lifted of 50 pounds occasionally.  May be exposed to various allergens and work environments, including temperature changes
  • Tasks will be performed using and in the proximity of coolers; ovens, stoves and other hot equipment; cooking and kitchen utensils.  Will be required to spend the majority of time standing and walking for prolonged periods without a break
