Job Description

Basic Function

Under general direction, washes and cleans tableware, pots, pans and cooking equipment. Keeps the dish room and equipment clean and organized. Cleans and resets tables after guests have departed maintaining a clean, safe and sanitary dining area for guests. Assists with receiving and stocking supply orders.  Follows Company policies and procedures.  Maintains the work area in a clean, well organized manner, and assists others as needed.

Job Duties

  1. Has a +1 Service Attitude and works cooperatively with all team members to provide a positive dinning experience for each guest.
  2. Transports trays, service ware to and from kitchen.
  3. Washes dishes, pots, pans, flatware and glassware using automated dish machine. (Some pots and pans are cleaned by hand.)
  4. Assists with receiving and storing all hotel orders/supplies.
  5. Is responsible for tableware to prevent breakage and loss.
  6. Keeps the dish machine clean and reports any functional or mechanical problems immediately.
  7. Monitors dish machine water temperature and chemical usage to ensure sanitary wash cycle.   
  8. Washes and stores all tableware and kitchenware.
  9. Ensures area is clean and organized at all times, including shelves and equipment.
  10. Maintains adequate levels of clean tableware for dining room and kitchen.
  11. Maintains an adequate level of dish detergents and cleaning supplies.
  12. Clears and cleans under and around tables, chairs and booths before guests are seated. Resets tables according to standards.
  13. May assist in setting up meeting rooms.
  14. Vacuums all carpeting and sweeps and mops all flooring in the dining area.
  15. Carries dirty linens and tableware to the dishwashing area and organizes it for effective cleaning.
  16. Restocks side stands with clean service ware, restocks the bar during meal periods and replaces empty soda boxes, CO2 and beer kegs.
  17. Empties trash and relines cans.
  18. Notify supervisor of items that are low.
  19. Appreciates the diversity of our team and guests and contributes to maintaining a positive work environment at all times.
  20. Complies with all food sanitation laws, certifications and regulations.
  21. Interacts with restaurant guests in a friendly courteous manner to ensure guest satisfaction.
  22. Attends and participates in all scheduled employee meetings and training. 
  23. Complies with all safety / security rules and instructions in performing work efficiently while protecting self, fellow workers and the hotel.
  24. Performs other duties as required or assigned.

General Knowledge, Skill and Ability

Requires ability to take written and verbal direction. 

Requires ability to communicate in a friendly manner with guests in order to create a warm, comfortable, relaxing environment. 

Must have the ability to work in hot, wet, humid and loud environment for long periods of time.

Mental and Physical Requirements

Education: Requires knowledge, skill and mental ability equivalent to completion of 4 years of high school.

Experience: Previous experience in working with the public or food service experience preferred, but not required.

Physical Skills: Requires ability to walk and stand during entire working period of 6-8 hours.  Requires ability work in a standing position for long periods of time up to 5 hours.  Requires ability to   reach, lift, bend, and stoop. Must be able to safely lift bags, cases, and stacks weighting up to 60  pounds up to 30 times per shift. 

Working Relationships

  1. Reports to AM/PM Supervisor or Manager on Duty.
  2. Maintains a positive and cooperative work relationship with all hotel departments.
